Brownstone Micro Brewery

Brownstone Micro Brewery is a boutique brewery located in Doveton, Victoria within the Atura Dandenong hotel. Thanks to maestro brewer Steve ‘Hendo’ Henderson our 500 litre Micro Brewery pumps out a spectacular drop that is very popular among the locals. The only way you’ll know is if you drop by, grab a paddle of our finest and try for yourself!

DOVETON PILSNER

With a simple German malt base for a pale golden colour and loads of Kiwi Nelson Sauvin hops, our NZ Pilsner is bursting with gooseberry, white wine and tropical fruit aroma and flavour.

Malts: German Pilsner and Carahell
Hops: Magnum and NZ Nelson Sauvin

DOVETON PASSIONFRUIT SOUR

Loaded with house-grown passionfruit flavours, our sour is packed with flavour; surprisingly tart and deliciously fruit in aroma, it’s best enjoyed with a fresh mezze bowl.

Malts: Wheat, Pilsner
Hops: Small bittering of hops

DOVETON PALE ALE

This beer is an American Style Pale Ale brewed with all Australian Malt and US Hops. The tropical fruit, citrus and subtle pine aroma is backed up by subtle crystal malt sweetness, finished with a cleaning wave of bitterness. Best enjoyed amongst friends.

Malts: Pilsner, Munich, Crystal
Hops: Northern Brewer, Mosaic & Cascade

DOVETON SUMMER ALE

Low in alcohol (3.5%) but not in flavour, this is a Summer Ale designed for those long hot days relaxing and doing little…or nothing. A delicate Pilsner malt base is blended with Amarillo hops and the 7 C’s hop blend, Falconer’s Flight. Look out for notes of pine, tropical fruit, and citrus. Best enjoyed on its own but with a friend.

Malts: Pilsner
Hops: Amarillo, Falconer’s Flight blend

DOVETON STOUT

Our vanilla milk stout delivers plenty of chocolatey goodness with a smooth creamy finish. This sweet stout is brewed with the addition of unfermentable milk sugar (lactose) that gives the beer a subtle sweetness, accentuated with hints of vanilla bean.

Malts: Maris Otter, Munich, Chocolate, Caramel Munich II, Carafa Special III, Golden Naked Oats
Hops: East Kent Goldings
Other: Vanilla Bean

DOVETON LAGER

The new kid on the block is dedicated to our locals. They wanted the crispest, smoothest and easiest drinking golden ale we could produce. Thanks to COVID-19, we have spent many an hour crafting this delicious golden juice for everyone to enjoy – particularly after lockdown.

Malts: Pilsner, Wheat, Carapils
Hops: Northern Brewer, Saaz

DOVETON IPA

Bright orange in colour, and 5.8% ABV this American IPA packs plenty of punch! The all Australian malts place emphasis on being pale so the hops come forward, the hops being a mixture of both US and Australian. This gives a complex tropical fruit flavour and aroma, subtle crystal sweetness and the Centennial characterised by onion-like notes. This beer is for those that like plenty going on.

Meet our current brewing intern Chelsea!

Chelsea is doing an amazing job at keeping all our brews available for our clientele. Get to know a little bit about her below.

What was the first beer (epiphany beer) that made you want to become a brewer?

A beer-savvy friend introduced me to Rodenbach – a famous sour, red-brown Flemish ale – about 7 or 8 years ago, and I was instantly fascinated. How could a beer be so complex and drinkable at the same time? And how do you make one? It’s a little wine-like, quite tart, but with a bit of sweetness – highly drinkable and moreish.

How progressive do you think the craft beer industry is?
By its nature, I think the craft beer industry is quite progressive, and necessarily so – especially when you’re trying to convince folks to buy locally-produced products that might be more expensive than those produced en-masse by global giants. I love the parts of the craft beer industry that are returning to their roots and establishing a sense of place: small breweries and brewpubs that are connected to their local communities and local producers. I’ve really enjoyed seeing the rise of non-alc and low-alc beers, too, and seeing heaps of great female-owned and operated breweries producing amazing beers.
Favourite style of beer to brew and why?
6 months ago, I would have probably said a West Coast IPA, or even an Oatmeal Stout, but I’m quickly coming to appreciate the art and finesse in producing a great Pilsner (Brownstone makes a delicious German Pils!) or lager. There’s so much to be said for making a really great, balanced lager. It’s a delicate art.
Where do you see yourself in 5 years?
As well as being a brewer at Brownstone Microbrewery, I’m also a touring musician, so my 5-year plan is to open an amazing brewpub, serving world-class beers and world-class music.
Best beer and food combo?
Fish and chips and an IPA. No question! (Make that a double or triple IPA if you’re not driving.)

Every year we offer an internship at Brownstone Micro Brewery to host a new graduate brewer. They get to craft their own brew that makes it onto our menu as their signature beer before they head off into the new role.
